I will include recipes and speed techniques for American Comfort Foods, Tex-Mex (my personal favorite), Country Italian-Traditional, Korean/Asian, and last but not least, how to feed large groups of people, planning and preparation or just my wife and the dogs...
Back in the day I have been known to go to work for a restaurant or chef just to learn a technique or a recipe.
I have line cooked and prepped in mom and pops operations, cafeterias, nursing homes or hospitals, Hotels (Sous Chef ) and more than one four star restaurant line cook to pastry chef.
Eclectic Shift of Thought
Emu's were being raised for a while for food. To my good fortune I let the farmer who raised these invite me to dinner, Emu's taste like very lean red meat that is a bit stringy but still very tender. The problem arose because I had thought of them as pets with distinct personalities and I simply wouldn't eat a friend. On the other hand if you go to someone who knows about raising Emu's and most importantly dressing out the bird then an Emu is excellent protean. Just don't give them names.
